It’s nearly Christmas and my 7 chookies continue to lay eggs everyday
I expected their egg laying to tail off, should I supplement their diet to keep them in good health?
 
It's not unusual for some/especially first year birds to lay through the period of short day length. A good layer feed or all flock plus oyster shell will be sufficient for them.

My chickens are ex-bats and they are laying pretty consistently through the winter. Hens are pretty much fine in winter, though in cold spells/wet spells as you said the laying may cease. I agree with the above posted! Feed mixed grit, depending on how severe your climate is, maybe go with a higher protein feed.
