Egg selling laws in CA

    So, I live in the beautiful, and beautifully restrictive, state of CA. Apparently I have to register with the state [​IMG] and grade all my eggs (not to mention package them and label them just so) in order to legally sell any. But the directions on how to grade are a bit vague. I understand the weight thing, but as for air cell and candleing I am a bit at a loss. There is a sheet with cutouts, I think I put the egg on the light and measure the air pocket--but do I have to look for anything else? How do I see the air pocket on the dark eggs? I have Marans that lay super dark brown eggs. Does anyone sell their eggs "legally" in Calif.? Am I on the right track? It seems like a whole lotta hoops, but that is normal for CA I think.
