    This is one of our favorites and it quick and easy:

    Eggchiladas

    Scramble 1 dozen eggs, add 1 cup shredded cheddar cheese and 1 cup salsa. Spoon into warm taco shells and enjoy [​IMG] Can also top w/sour cream, peppers, etc.

    We do those, too!

    Have you tried it with a little diced potato? Dice them small, par boil them then brown them off with a little onion in just a bit of oil or you can slide them in the oven and let them brown.

    You can add them to the eggs or simply layer them in your taco shell.

    A little bacon or sausage (or both [​IMG] ) never hurt either!!

    The potatos, bacon and or sausage all sound good. I'll have to try that next time for a little change:)

    fried potatoes(like hash brown), bacon/sausage, scramble eggs, cheese (I like jack or better pepper jack) & salsa, wrapped in a flour tortia. Thats what we call a breakfest burrito in So. Ca.

    Or even 1 cp white rice mixed with about 1/2 can chile/beans, make sure rice/chile are not runny mix with scamble egg & cheese with taco sauce

    We do that but I love to sautee chopped brats and onions in a little olive oil and add that to my eggs! YUMMY!
