emu female laid eggs without male emu..it is ok to hatch them?

If there is no male, the eggs will not be fertile. If she was with a male while laying the eggs and something happened to him, yes you can incubate them.

There are plenty of uses for non fertile emu eggs though

they are delicious
you can save the shells for carving
