Feisty chicks

so, I have 8 chicks,
three sapphire gems,
Two australorps,
One Brahma,
One light Brahma,
And one that I’m “pretty sure” is a black sex link.

I noticed that they are finally starting to get their feathers (yay!) but for the past two days or so they have been very brutal to my fiancé and I, and crazy in their brooder. Especially the Australorps and the black one. (I actually had one fly out yesterday! Which was a shock to me as they’ve never tried this before!)
They will come after and peck at our hands as we are feeding them or changing water, or just trying to bond with them.
I was just wondering if this is a part of the molting they are going through? And how I get them to stop this behavior?

I have an 8 month daughter old that will be growing along side them and I don’t want them to be feisty or ornery towards her!

How much space is in the brooder?
Do you have anything for them to perch on?
They sound bored.
I would put a container of chick grit in with them along with a plug of sod from their run area.
