Catray44 shared a Wheat Bread recipe that we had tasted at her home with me and i kind of adjusted a few things for our house.

    recipe written as i altered:

    Wheat Bread

    3 C. Warm Water
4 tsp. Instant Yeast (NOT dry active, Instant)
    1/3 C. Granulated Sugar
    5 C. Bread Flour
    3 TBS. Melted Butter
    1 TBS. Salt
    3 1/2 C. Whole Wheat Flour

In large bowl, pour in sugar then water and stir until sugar is dissolved.
Sprinkle yeast on top. Add bread flour then stir until mixed.

Let rise in a warm spot for about 30 mins or until bubbly.

Add the melted butter and salt then stir. Stir in two cups of wheat flour and kneed either in the bowl (if large enough) or on a flat surface. Add up to 2-3 more cups of wheat flour until the dough is slightly sticky.

Put dough into a greased/oiled bowl and turn to coat. Cover with plastic wrap or a tea towel and let rise in a warm spot for 1 hr. or until doubled in size.

Punch down, divide into three portions by cutting straight down with a flat knife. Don't tear, it breaks the strands of gluten.

Shape into loaves or rolls etc and put onto/into buttered pans.

Cover and let rise 30 - 40 mins. or until dough rises 1" above the edge of the loaf pan.

Bake at 350* F for 25 - 30 minutes or until rolls/loaves sound hollow when knocked upon and golden brown.

Cool for 1 minute in/on pan then remove to cooling rack to cool completely before slicing. Or eat all right away and with lots of butter etc. [IMG]

Why instant yeast instead of dry active?

I'll have to try it. I've been looking for a good wheat bread recipe for a long time. Have tried a lot and they're just never quite right. Maybe this one will be the perfect one!!
