finnish pancakes, yum!

    8 lg. eggs, 1 Qt.fresh milk, 3 to 4 tbls. sugar, 1 tsp. salt, 1 C. flour (8 oz.), 1/4 Lb. butter

    melt 1/4 lb. butter in pan 12" by 16". MIx thoroughly with beater-milk and eggs; then add sugar, salt and flour. Pour mixed batter over melted butter. Bake at 450 degrees in oven for 20-23 minutes. Cut recipe in half for a 9" by 13" pan. Cut recipe in thirds for a 8" by 8" pan. Serve with maple syrup, jelly or butter.

    I got this recipe from our local fair, every year for like five years my husband would pick up the recipe card but I'd never make it for one reason or another. Finally I did, Its super easy and a great comfort winter food. It also uses alot of eggs if your looking to use up extra. It is so light and fluffy I could just eat the hole pan myself.
