Our first home raised duck last night. Boned and skinned. Stir fried until medium, and then I took it out of the wok so it wouldn't get over done. Stir fried home raised veggies (snow peas, zucchini, green onions). Added back the duck, tossed with cooked rice noodles and dressed with oyster sauce. Home grown radishes made into radish ginger pickle on the side. I assure you, it was well worth the trouble of raising them and butchering them. Yum. Let's do it again.
