First thanksgiving turkey roast

Hi,
I have 3 turkeys that are all about 5 months old. I would like to know what is the optimle about of time to let it rest. I like my chickens at 72 hours.

I suggest 4-6 days, with a bear minimum of 3 full days. Processing on Saturday, and preparing them on Thursday would be ideal! Just keep them at 33-40*, and you can allow them to rest for up to about 8-10 days, but I think that may be pushing it.
