First time chicken mama trying to figure out sex/breeds

Will you choose when they mate or will you never let them in with the hens?

I am thinking about creating a breeding pen that will allow me to choose.

Would 1 to 5 work if i give the hens a break a few day a week in mating season? I could make a pen right beside my existing one to keep the rooster in to give the hens a break.

It may work if they are kept together for shorter periods of time so that the roo isn't constantly mating them. It is going to be a bit of a learning process for both of us.
