does the food you give your chickens, dry food for example, impact the quantity/quality of the eggs?

Yes. They need some layer ration and/or oyster shell in addition to what they forage. They need calcium and some protein to lay good eggz.

My eggs taste much richer when they've had grass and greens to eat.

most assuredly...

lots of greens and bugs...fruit and of course chicken feed to make sure they are getting a balanced diet.
some say onions will make the eggs taste like onion...

Layer feed when they reach POL, to ensure strong shells.
