I collect eggs daily and noticed some on the floor beneath the boxes. I would say they could be 2-3 days old. Are they still safe to eat? Temps have gotten up into the sixties during the day and down into the 30's at night. Am I better to just throw those away?

They should be fine.
I believe it takes a few days at much warmer temps to start developing, if you have a roo.
I'd be more concerned if they were very dirty. Slightly dirty ones would just get washed.
Many people leave there eggs out at room temperatures for weeks.

If it bothers you, you could feerd them back to your chickens. (cooked)
