We butchered 2 toms Friday night, plucked, cleaned, rinsed and packed them in ice, then put them in the fridge a few hours later. Thye will be OK for Thanksgiving correct? My husband wanted to freeze them, but they needed to be in the fridge a few days and then it would take 3 days to DEfrost them, so they would have only been frozen 1 day. I thought they would be fine for 6 days, please tell me I'm right~LOL They are in foil pans with tight foil covers in a fridge that is rarely opened (garage fridge).
 
That is probably ideal resting time. The only caveat is that the birds need to have been processed well so fecal contamination etc. was kept to a minimum. Bacteria grow in the fridge, just slower than at room temp.
