If I cross a gold laced polish rooster with gold laced Cochin hens can I expect gold laced offspring since it is two different breeds? Will the lacing breed true?

The genetics of the two are different. Polish are birchen at the E locus and cochin are most likely brown at the E locus. The polish have an additional gene called dark brown which extends the lacing into the tail and other areas that are not laced in male cochins. So male polish normally have more lacing than a male cochin. The females should look the same.

You will get females that are equally laced but the males will look more like the male cochin but with a crow wing, with respect to lacing.

If the cochin's under color is slate to dark gray they are brown at the E locus.
