Good sweet potato pie recipe?

Anyone have a good sweet potato pie recipe they don't mind sharing?

When my mom passed (too young), we lost many great recipes as she was one of those cooks who just used recipes stored in her noggin.

I have some beautiful organic sweet potatoes at home that are dying to become a yummy pie for me and my hunny!

I've used this for fresh pumpkin, butternut squash, and sweet potatoes:

Butternut Squash Pie

3 Eggs
2 C. Squash (Cooked, Mashed)
1/2 C. Brown Sugar Packed
1/4 C Granulated Sugar
2 tsp Pumpkin Pie Spice (I don't like it too spicy)
2 tsp corn starch
1/2 tsp. Salt
1 can evaporated milk

2 pie shells

Pour mixture into raw crust, bake at 450 degrees for 15 minutes, reduce to 350 continue baking for 40 minutes or until knife inserted in center comes out clean.

You may want to use the blender or food processor on your cooked sw. potatoes to chop up the strings that they tend to have.

Here's my very favorite sweet potato pie recipe. It came from the book "Spoonbread & Strawberry Wine." I've used it for about he last 10 years.

Sweet Potato Pie

Best sweet potato pie ever!!
3 large eggs
1 ¼ cup sugar
Dash Salt
1 teaspoon cinnamon
½ teaspoon allspice
¼ teaspoon nutmeg
1 cup heavy cream
3 cup cooked mashed sweet potatoes
1 unbaked 10" pie shell
Beat egg well, add sugar, salt & spices, and mix thoroughly. Add cream & stir. Add mashed potatoes & mix thoroughly. Turn into pie shell and bake in preheated 350 degree oven for 1 1/2 hours or until firm.
Servings/Yield: 10 servings

Spoonbread and Strawberry Wine...what a great title! I'll have to try that one too. I have two pie crusts ready to go, so maybe I'll just try both recipes! I'm sure my bf won't mind if I bake two pies.
