My FIL was taking his ducks to the Amish for processing so DH took a few of ours too since we HATE processing ducks. Even so, they still have pin feathers, (the Amish warned us, first) so I'll be cleaning those up before eating. However, he said the guineas look beautiful! Just like supermarket chickens but you can see the meat underneath is darker. This bodes well for us processing the younger ones ourselves. (The Amish stop processing by Thanksgiving up here, too cold.) These 2 were almost 5 months old our others aren't quite 3 months and still quite small. I guess I'll be slow roasting one this weekend via the MissPrissy method.
