Not long ago I read on here not to eat or freeze your chickens the same day as they are butchered, but to refrigerate a couple days. Last year we butchered, then immediately put them in the freezer. I wouldn't admit it then, but they were kind of stringy. Last Wed. we butchered 2 and put them in the frig. Sat. I put one in the freezer, and we baked the other Sun. It was incredible!! Texture-wise it was like store-bought. Much nicer than last year! Thanks for the advice!
