Hello fellow BYC people!

So one of my customers is going to make pickled eggs, and I told her the fresh eggs are really hard to peel.....Is there a secret to this that I can share with her so she doesn't have a hard time?

Please help! And thank you!

I add salt, 2-4TBs approx, to the water. Bring to a boil, cover, turn to simmer x 15 min for chicken eggs. Pour off water, plunge into ice water, peel immediately. Farm fresh eggs are just that FRESH. The ones in the store may be several weeks old. I have never kept any of my own eggs long enough to peel easily without the addition of the salt.

if i have to use fresh eggs for hardboiling, of course i run cold water on them, then crack and roll, then put back into the cold water until i crack all of them. this does seem to help. i also add a little vinegar to the boiling water.

We gave a dozen eggs to some friends of ours who really love hard boiled eggs. I warned them about how difficult pealing them would be and suggested them adding the baking soda tip and she said it worked great!!!!

So, that's what I would suggest.
