A turkey hen lays an egg every day or every other day and waits until she get 10 to 20 eggs before she starts to sit. So those eggs would be at least 10 days old. You can hold them for a week easy and they will hatch fine. We keep ours in the back room of our house, the heat is off in there so it's nice and cool. I store them in egg trays for the incubator with one end propped up about 8 inches high and rotate the tray end to end twice a day.

I have friends that use a Hovabator turner to keep their eggs turning. We use the simplier method of turn the egg cartons by hand.
