How do I break her of this nasty habit?

I've got a bird who lays her egg then immediately breaks and eats it. I'm not sure how to break her of it. I've heard of some of the egg eating fixes like putting pepper in the egg, but she only breaks and eats hers and it's immediately after she lays. She's making a mess of the nest box.

Egg eating can be a hard habit to break - and, worse, it can spread in a flock (eta - "chicken see/chicken do"). *I* personal would rather consider use of roll away nests or removal of the offending hen.
