How long do you wait before cooking?

    Ok, so say the birds are butchered... how long do you let the meat wait in the fridge before cooking it? What is the ideal time for optimal tastiness?

    you should let them hang in the fridge for at least 48 hours.
    Personall I will let mine hang in a fridge for at least 7 days before I cook em.
    What type bird you processing.
    The different breeds have different taste characteristics.[​IMG]

    Well, right now I have some broilers, and shortly we will be butchering our extra roos (EEs and buff orps).

    We read that aging chickens should be between 2-5 days. We let ours age in the fridge for 5 days and then I cooked them. Tasted great. They were Buff orpgintons.
