I was curious to see how long a summer squash would last into the winter sitting on the counter. I took a 18 inch Zucchini from the garden at the end of the year and let it set on the counter until today. We sliced it up into 1 inch thick "steaks" sprinkled them with herbs, olive oil, and cheese and broiled them in the oven. Not bad! Has anyone else had any success keeping summer squash into the winter???
