I'm trying to plan out when I need to order my chicks from the hatchery to show them in July. Im getting Silver Polish and Brown Leghorns. How long does it take them to fully mature or at least to show level maturity?

Birds from a hatchery aren't show quality. :/ and wouldn't do well in shows.
Your best bet for show birds is to order from a breeder that breeds for quality, color, and size. They are more expensive, but way better looking and fit the standard of perfection for their breed.

Also most birds mature at 6-8 months old when they begin laying.

No offense but I beg to differ with the birds I have won 2 grand champs, 2 reserves, all blue ribbons, reserve best in show, and also senior showmanship in my first show

:woot: I think "show birds" could differ by area. In my area we have tiny fairs and there is nothing overly fancy or super special about them. Here I know we could enter with our farm store pullets and be just fine.
