How often do Light Sussex hens go clucky?

I have 2 hens one is about 18 months old and was laying on 20+ eggs,while I was away someone took the eggs(it was the 2 legged kind) and she hasnt shown any signs of being broody since,the other hen is 11 months old and she isnt clucky at all..I also find they only lay every second day, is this normal..can I encourage them to go clucky at all? Thanks for any info,from Kat from down under.
