How old it too old to eat a heritage breed

    I have a 3 year old Slate that has turned aggressive, I was wondering if I butcher him would he still taste good or is he way past his prime.

    Never, just choose recipes that require long and low cooking (slow roasting) -- long and low in liquid is even better (soups, stews, etc.). Or grind the meat up and use it in sausage, turkey burger, etc.

    Taste actually improves with age I think. We rotate our breeders every three years so what ever doesn't sell at 3 years goes to the freezer.

    One thing we do with the older birds is just skin them and cut them up vice plucking. it's faster and a cut up bird takes alot less room in the freezer.
