I bought a pint of organic heavy whipping cream. I like to whip up the real stuff for topping pies. Today I baked just one pumpkin pie, and would like to whip up just a cup of this whipping cream to top it. How should I store the remaining cup of cream once I've opened the carton? Should I freeze it as is, and thaw & whip it at a later date? Or should I whip the entire pint and stash half in the freezer? I'd like to save $$$, and also calories, by not using the entire pint at this time. Thank you for your input!
