Well, I dressed out five roosters to put in the freezer today for the first time in probably 25 years. I skinned and cleaned them all in about 2 hours, so I feel pretty good about that.

I have a flock of Ameraucanas, because they are supposed to be a nice dual purpose breed, but boy they sure were narrow. They looked so big with all their feathers on, and so puny without! I like how lean they all were, I am always grossed out by the big hunks of fat in store bought birds. I think I need to focus my breeding efforts on producing bigger bodied birds going forward. This is what I am hoping to do, produce a decent sized bird. Yours may have been small this time but at least they didn't go to waste. I pressure cook and can my older roos. I am two roaming the yard now that need to be done.

The meatiest dual purpose bird I have processed have been Delaware's. My Ameraucana's dont produce much meat for the feed they eat.
