I had frozen watermelon and gave it to them as a treat in this hot weather and they loved it and I left them tucking into it. but when I went back out to check on them they had eaten the skins also, is it safe for them to eat the skins?

I give mine watermelon, too, as do many, many chicken owners here. I'm pretty sure you're safe.
