And they must love it because they are laying about everyday, although the internet says they only lay once a week

Chickens that lay few eggs tend to lay in clumps. So they lay every day or maybe every other day for a while, then they stop and go broody or they stop and take the winter off. Then at some point they start laying again for a bit.

They might lay about 50 total eggs in a year, and a year has 52 weeks, so the average could be an egg a week--but most weeks you will not get exactly one egg.
