Ingredients
1 duck- skinless, pieced out
Chicken Buillon or Chicken stock
1 jar of mushrooms- or can or fresh or whatever you have or prefer
1 whole onion- chopped
1 can cream of chicken or cream of mushroom soup
1 bag of Yellow rice
Rinse duck pieces and place in crockpot cover with water or chicken or duck broth, if you use water then add a few buillion cubes for flavor.
cook on high for 2 hours
add 1 chopped onion and sliced mushrooms
once duck is done take out of crock pot and set aside to cool to debone and cut into pieces.
At this point there are a couple ways you can proceed, I take the yellow rice and put it into the rice cooker so that it cooks fully faster.
Add the chicken and the cooked rice back into the pot and add a can of cream of mushroom or chicken soup, combine all together and let simmer in crock pot for 10 or so minutes so ingredients can marry.
This goes good with some homemade jalapeno cornbread or cheesy garlic Texas Toast.
ALSO this can be cooked on the stove top but I prefer to slow cook the duck in the crock pot so that it becomes more tender. I have also cooked the rice together with the chicken in the pot but I like to cook it seperately in the rice cooker then add it back to the onions and mushrooms and the little bit of broth in the crock pot.
