My experience with white jersey giants is that it is hard to tell, especially young. Their combs don't grow real fast or overly big like other breeds roosters, and the hens combs are not overly small.
I actually didn't realize I had two cockerels hatched last summer until this winter. A couple of my hens are almost as big as the rooster, so the size didn't give it away. I should have noticed the tail feathers were getting long for a hen but didn't. Wasn't until I was wondering why the rooster kept being mean to a couple 'hens'??, well I figured it out when I saw one attempt to mate and the rooster go after it.... And dang, that other one is a cockerel too!
    Lol...
