Just found my new favorite use for duck eggs! (recipe added)

Had several duck eggs that needed to be used, so I got creative.

We made hush puppies with them! Best darn hush puppies I ever had. Melted in your mouth. Next time there's a hush puppy cook off, I am so bringing some duck egg ones.

I was too, and these hit the spot. I never knew that using duck instead of chicken eggs could make that much difference. Wow it does.

We just used a basic recipe.

1 1/2 cup cornmeal (we use corn muffin mix)
1/2 cup flour
1/2 teaspoon salt
2 teaspoons of baking powder
1 tablespoon sugar
3/4 cup milk
1 duck egg, beaten
half a large onion chopped fine
You can add a lot of things here too, like jalapeños or various peppers, cheese, etc.

mix it up and drop spoonfuls in a few inches of oil, either in a fryer or very deep skillet. Turn until all sides golden brown.

I make my cinnamon rolls with duck eggs ... they say that French Chefs ONLY use duck eggs for their pastries. I am just waiting for my Muskovies to start laying... I should get 2 female Indian runners too .. they lay a lot more eggs. Now that I am down to 8 Banties and the 3 ducks... do not have as many eggs as before ... have to settle with Banty eggs - 2 for every one called for in the recipes
