I have a giant pure White Brahma with long/big but White legs and a pure White Brahma with short but yellow legs. Yellow legs is the desirable trait.

I also have various large Brahma hens with both white and yellow legs.

I am trying to create a pure White Brahma with long/big legs but in yellow.

For all the geneticist out there how do I approach this?
Are short legs in Brahma dominant or recessive traits?
Are yellow legs in Brahma dominant or recessive traits?

You could try using both roosters: either put some hens with each one, or hatch eggs from one rooster and later from the other. Once you raise some chicks from each one, you will be able to see whether one produces better chicks than the other.

Since white/yellow legs are controlled by just one gene (yellow is recessive to white), I would probably start with the long-legged rooster over the yellow-legged hens. If that rooster carries the recessive gene for yellow legs, half of his chicks should have yellow legs, and you would then have yellow-legged chicks from the long-legged father.

You might also want to look at the leg length on your hens, to see if any of them are obviously longer than others.
