What is a good live weight for a Cornish X at butcher time? That is, for one that doesn't necessarily need to be HUGE, but larger than the average store bird would be nice. I know that 8 weeks is somewhat standard for butchering- are they bigger than store birds then?
 
All cornish crosses are not created equally. But 8 lbs average live weight is about what you are looking at.

Different hatcheries have different weight yields. Some of the Cornish giants offered up here will go 10 - 12 live weight without die off issues.
