Looking for a chicken and rice recipe for butchered year old rooster

    This will be my first time cooking a fresh chicken...He was just awful and flogging us everyday so we decided it was his time to go, we let the chicken rest in the fridge for 3 days now. Should I just bring the some water with celery, onion, salt, pepper etc and the chicken to a boil and let simmer for a couple hours or will it still be tough? I keep reading that older chickens become tough and I don't want to ruin it, thanks!

    Depends on how old he was, if you have pressure cooker the meat will get tender in no time. My mom used to just simmer rooster for 2-3 hours in water & tomato sauce w/ thyme & basil what she called Italian chicken with red peppers, green pepper, onions and add potatoes w/ salt/pepper to taste. It's one of our fav dinner.

    Recipes done all day in a crock pot usually turn out pretty well, especially since you rested the meat for three days.

    You may have already cooked it, but I'd recommend brining in salt water for a few hours first. I just google the ratio of salt to water and soak for 6-8 hours first. Then, yep, low and slow, either a slow simmer or crockpot. A pressure cooker works well also.

    Thanks for all of the ideas! I'll keep them in mind for next time :) I just simmered the chicken in a stock pot with seasonings for a few hours then cooked on low in a crock pot with the recipe I usually use for chicken and rice, it made for some great dinner!

    After chasing one of the roosters around the yard trying to show him who is boss, I found this thread and will be having chicken dinner soon! Thanks!! I'm glad I'm not the only one being abused by their "pets"!
