Low Fat Quiche

By cutting out the crust and using low and non fat alternatives, this quiche has less than half the calories as your standard quiche!!

1/2 c fat free milk
2 tablespoons all purpose flour
3/4 c egg beaters (

that's what the recipe says... I just do 3/4 c eggs, beat)
1 c low fat cottage cheese
2 oz reduced fat cream cheese, cut up
1 c (4 oz) shredded sharp chedder
1/2 teaspoon sugar

Preheat oven to 350 degrees. Whisk milk and flour. Whisk eggs, cottage cheese, and cream cheese (mixure will not be smooth). Stir in chedder cheese. Add sugar and 1/2 teaspoon ground black pepper. Pour mixture in 9 inch greased pie plate. Bake 45-50 minutes, or until knife comes out clean.

Top with fresh salsa. Mmmmmmm....

My sister in law actually found that in a magazine! I think it was Cooking Light or something along those lines.
I think I'm going to try adding some broccoli next time. But I loved how Lori put the salsa on top. It gave it that extra kick.
