Male or Female

    For the Cornish X does it matter what I order?

    Well, it doesn't matter to ME what I order, but only you can decide for you. The males will be a little bigger at butchering time, unless you wait a week or so on the females. As far as taste or texture, there's no difference.

    I always order straight run, generally I get a few more females then males.
    I butcher a few at 4-5 weeks for cornish game hens (they are usually roosters as they grow bigger faster)
    Then I butcher as they get to the size I want for fryers or cooking on the grill.
    The roosters are always the first to go, which means I end up with a pen full of hens which is fine by me. They don't get as big as fast and I can butcher them over several weekends.
