I've planted amaranth in my pasture, with the dsozens of other things there. In small quantity, as forage, mixed with everything else, I'm not worried about collection, separation and cooking - yes, there are some anti-nutritive properties, but by keeping quantity small, I keep concerns small. Some of the other things in their diet can help counter some of those concerns as well. If I had a lot of it for harvest, I'd set up a screen system, not only to air dry/sunbake on a large surface as a shallow layer, but to shake gentle and allow the seeds to fall thru while retaining the larger chaff, above - much as in done in archeaology digs.

So both you and Gypsi imply that for teff or amaranth you combine everything and then you have a screen system to separate the larger chaff from the smaller seeds. I asked because I know those that do pea-canola polyculture in the North, for example, can separate the two at the combine level. Canola is essentially mustard seed, and you have all seen how big a pea is.
