Mint Pesto - great for lamb or chicken 1.5 cups of chopped fresh mint 2/3 cup freshly grated Parmesan cheese 1/3 cup slivered almonds 2tbsp Canola oil 1. Place all in food processor . Process using on/off motion until finally chopped . 2. Pack in small freezer containers . Refrigerate for up to 1 week or freeze for up to 6 months. Makes 1 cup .
