I know it’s early days but I’m quite the impatient new chick mama. 2-3 weeks old. Roos? Pullets? Any guesses?

I think I have an Amber White, Mille fleur d’uccle bantam, Araucana, silver sebright- and one unknown bantam.

At this age that's all you could get is a guess.
Too young to accurately sex.
 
Should be easier to tell around two weeks. The guy I buy from always notes the tail and wing feathers. Those without tail feathers (or hardly any tail feathers) are most likely Roo's. He also holds the wing and checks the shape/formation at the tips of the feathers. The hen has a more developed wing-feather structure (like Coverts and flight feathers) while the Roo's wing-feathers seem to develop a bit slower. Soon you'll make some educated guesses and see how it turns out :)

You have a Silver Sebright bantam, an Easter Egger, & 2 Cochin bantams. The Silver Senright will take the longest to sex as they are hen-feathered and the comb takes a while to develope. I was sold 3 Golden Sebright pullets and one turned out to be a cockerel.

Agree on the sebright and EE, but the feather legged ones are buff Brahmas.
