My favorite way to cook Muscovy is to roast it in the oven at 325* Fahrenheit. Before putting it in the oven to cook, I splash it with lemon juice, and season it with salt, sage, and thyme.
Cook until desired doneness - usually takes an hour or two to cook depending on the size of the Muscovy.
Serve with cranberry sauce, crab apple sauce plum jum, or mint jelly.
