I see so many questions on the subject and I reviewed all the answers and developed my own method
I am using some cheap little giant incubators. I do not trust the gauges on the units I use the ones with the probes in side the incubator. I use the dry method only adding 1 oz of water when humidity drops below 20%
sometimes every day if necessary . On day 18 I add enough water to get 60%.As far as temp goes there many fluctuations through the day, 99 to 102 sometimes I simply place a folded up cloth baby diaper over the viewing windows to raise the temp and vise verse .
I never open the lid till day 18 remove the turner and candle, on this hatch I started 40 eggs and culled 11 non fertile eggs.
I see no reason to candle day 7 and 14 It wont change anything
Of the 29 eggs left 18 healthy checks hatched they started late on day 20 and finished late on day 21 I consider 62% a good hatch for a cheap incubator. The 11 eggs that did not hatch all had fully developed chicks but were dead when i opened them on day 23.Don't know why Karma?
I have my second hatch coming Monday. I didn't change anything so we will see.

My chicks are Bielfelders, Crested Cream Legbars 10 pullets and 5 cockerels they are really hard to tell apart breeds that young but they are auto sexing also 2 Light Brahmas and one Black Copper Maran
I will post some more pics in a few days if i can get them to stand still and update on my Monday hatch

This is not advice just my experience , experiment and develop your method
    Have a nice Morning
