I'm seriously considering starting a flock of quail for consumption. I have started a gourmet type take-out business and I thought they'd be excellent for that as well. Here's the link http://dinner2go.biz/ We're not open yet but Im hoping to be open by spring. I need a video on how to properly and easily dress quail for serving. Any suggestions. I looked at youtube and they only saved the breast. Is it possible to do the whole bird?

    Thanks!

We save the whole bird, just as if it was a little chicken.

Trouble is most "gourmets" are gonna just want the breast.

They have little bones in the legs and wings you must be carefull of.

Others have asked me to make a vid of processing a quail but I'm
a newbie. We just process and eat them.

You may want to look on gamebird.com
I don't go there often because BYC is my home forum but they may
be able to direct you further.

you should def do a video. Im sure there would be a lot of interested folks. I've eaten the whole bird before and seen them for sale in grocery stores. I think the whole bird would look so much better served that way. I'll try the other site. Thanks
