ok created this tonight, huge hit with family Apricot Chipoltle Chicken Bring to simmer 1 cup of white wine and 3/4 stick of butter. add 2 lbs thinly sliced chicken breast andseson with crazy Janes salt, stir until just cooked done. remove chicken with a slotted spoon. add to pan 1 box cream cheese, 1 small jar smuckers all fruit apricot preserves and one chipoltle pepper in adobo sauce. stir and simmer until all is combined and melted. then add chicken and simmer for about 5 min more. arrange chicken piecess on thick slices of homemade white bread and pour sauce over. WOW!
