I have half a cooked chicken leftover from supper a couple of nights ago and I need some ideas on a meal to make with it. I was thinking maybe something with pasta or rice to stretch it. I am feeding three people, two of whom are male and big eaters.

Thanks in advance for your help.

pick the meat off the bones, shred the chicken, add to two cottles of heated up alfredo sauce (i use the store brand in the bottle then spice it up with extra garlic, romano cheese) cook a big pot of linquinni one 16 oz. box or or 2 bags of wide egg noodles. Add chicken, sauce and some cooked broccoli to the cooked noodles and you have a quick meal. if you want to spoil them, grab some garlic breadsticks from the refridgerated roll section, cook up some of them according to directions on package BUT before you take them out of the oven, sprinkle with motzzorella cheese (i just turn the oven off when the sticks are done, put the cheese on 'em and let it all melt.

Yeah, that's what I was thinking. I was hoping that someone had a favorite recipe...something tried and true that they would like to share.

That sounds really yummy but I need something with simple ingredients that I have on hand. It is a 30 minute drive to the nearest grocery store and today is not my grocery shopping day.

Chicken and spaghetti or rice is good. Plus some vegetables (most men will eat corn or potatoes), lots of bread or rolls, big ol glasses of sweet tea! A salad or sliced tomatos (home grown of course, not those hydroponic things

) and your meal is done. Home grown veggies are the best...fresh corn, squash, green beans, purple hull peas, cushaw, new potatos, butter beans...dang, is it lunch time yet?

Several varietys of pasta, rice, cream of mushroom soup, tomato soup, spaghetti sauce, cheddar cheese, Mexican blend cheese, milk, cream, canned mushrooms, a variety of veggies, eggs of course, potatoes, and a large variety of seasonings.

Here are 3 easy personal favorites for using leftover chicken:

Creamy Chicken and Rice Bake - calls for cream of chicken soup, can sub the mushroom
