oriental large birds texas

I just got into roos again and i ordered saipen jungle, black shamo from ideal and some black brested asil from efowl.
Im looking to create a large bird with great game ability. Gonna keep a trio of each pure and cross bread some.
Do any of you have any suggestions for good birds. I want large(30+in) black roosters green sheen and a splash of red

Just finished brood pen on back porch. Still building my coop and run. Any sugestions on taking care of day olds when they arrive. This will be our first time starting with babies
