We had a chick hatch that was barred Rock roo over Ameraucana hen. What will she/he be like when it is full grown?

You'll likely have a black barred bird who lays green eggs, if the momma is a true Ameraucana that lays blue eggs. If momma is an EE that lays green eggs, the pullet has a chance to lay either brown or green. Color of the chick depends on the color of the momma, but the black in the father usually trumps everything but buff and dominant white.

The chick is mostly black with a little white and the mother is a true Ameraucana

Shes dark brown with some black speckles and some gold near her neck, and she lays blue eggs

With that color description, she's an EE not Ameraucana. The brown based color means your offspring may have some reddish/brown leakage, but overall you're going to get black barred birds, male and female. The blue eggs do bode well for green eggs in the offspring, though
