Yes! Exterior paint is better in my opinion for high usage things---like work sheds.

I don't know if most do but it looks nice and makes cleaning easier. If you go places that mix paint, you can usually find a can of mis-tinted exterior house paint. That's what I used because it was as cheap as fence paint but a lot more durable.

I don't because my boards are ruff cut and I just let them age.

Would exterior gloss be better than fence/shed paint for the interior

Gloss is good if you'll ever want to hose it down or might spray with disinfectant. The fence/shed paint is very porous/flat so it wipes off with scrubbing.

I have some kitchen & bathroom paint in white you can wipe it down will this be ok

Yup, should be fine. They won't mind.

I painted mine. Less places for mites to hide too. I used porch and floor paint. It takes time to dry but is designed for the elements and foot traffic. Super durable so far.
