I shop at the local Meijer. I don't know where the nearest Kroger is...

Ah. There's one in Grand Rapids. But not in an area of town I go to or through.
Meijer’s Thrifty Acres darn well better have it! Especially the big one in Battle Creek.

Random trivia. When Wally World started to build their “big box” 24hr super Wally Worlds…. I discovered that the floor plan was a mirror flip of the Meijer’s floor plan!
 
… part 2 to be mixed up tonight and baked….

A hybrid of scones/bread idea with higher protein level.(sorta)

So…. 6 days have passed & I finally felt like mixing this up.
~1 cup almond flour (Used up the remaining)
~1 1/2 cups of oats (maybe more?)
~2/3 cup flax seed meal
~1/2 the can of pumpkin
~1/3 of mango purée
All eggs used
~2/3 cup of almond milk

I’m planning to bake it tomorrow or Wednesday…
 
So… I left the mix in the fridge. Decided to use the remainder of the scone mix for mini waffles. By the way- Neither of the mixed batches have any sugar added… you can see that’s in the directions to add a little sugar. It isn’t needed.

~1/3 cup TEFF flour
~1/4 cup Soy Flour
~2/3 cup flax seed meal
~remaining 1/2 can of pumpkin purée
5 or 6 eggs used forgot to count shells
~2/3 cup of almond milk
~2-3 tbsp of water (maybe that much was in the can of pumpkin purée?)

Took 3rd try to get the right amount of time for completely cooking the mini waffles….
5:15 (min:sec)

Chicken and waffles, midnight snack is good.
I’d seen this in the Denny’s, Waffle House, & Huddle House menu’s for years & never wanted to try it. Then I was thinking, I’ve got the chicken in the toaster oven already - why not.

Pleasant surprise. The chicken was already in a seasoned marinade from Kroger’s…
A proper amount of butter on the mini waffle, a drizzling of honey & it was a surprisingly pleasant flavor combo: chicken, pumpkin scone hybrid waffle w/ buttah & honey.:lau

I made 6 mini’s. The remaining batter went into Tupperware & into the fridge for now.

I’m gonna save 3 for breakfast.
