Honestly, I was only half joking…. But…… I do have 2 more “in the bullpen.” Don’t mind Sher-Bear, she’s a bit of a ham.

Dinner was a multi-day production.
Thawed out a big hunk of pork.
Once thawed, sliced into ~1/2” thick filets- of sorts. Poured the coffee bean seasoning rub into a tub. Coated both sides of each filet.

Left it in the fridge for 2 days.

Pause button on the meal, I’m going to give a little back history from my youth.

From single digit years all the way into high school years, Mom would make pork chops in 2 methods. One with a breaded crust that’s baked around it. And that is a very tasty memory. The other method is one I never learned from Mom where she learned it from or who.

The pork chop Is seasoned with a lemon pepper or similar mild but, semi spicy light coating for baked in.

Once done baking the garnish is a very specific & naturally sweet flavor. Unsweetened applesauce.


Return to this dinner…
Corn tortillas with a sizae
Layer of pickled ginger
Layer pork sliced
Layer of apple sauce

Put it in the toaster oven to warm
Up.

Tasted great together. Italian salad dressing also worked quite nicely with this main course.

Pantry-palooza returns:

A few days back I insta-pot’ed a pair of rotisserie chickens. Then, Deboned them & made a nice batch of broth too!

This “leftover surprise” is:
1 packet of this rice mix (cooked in the “steam veggie” mode 1st go-round)
1 package of Kroger frozen peas
A modest amount of “pulled chicken”
A small splashing of pasta sauce on top

Restart the “steam veggie” mode for another 8 minutes.

Verdict? Will gladly repeat this simple “mix”
